Method
Assemble in Slow Cooker
- Place the raw chicken breasts in an even layer at the bottom of a 6-quart slow cooker.
- Scatter the rinsed black beans, drained corn, fire-roasted tomatoes (with juices), diced green chilies, diced onion, and minced garlic over the chicken.
- Sprinkle the chili powder, ground cumin, smoked paprika, dried oregano, onion powder, sea salt, and black pepper evenly over everything. Pour the chicken bone broth gently around the ingredients.
- Cover with the lid and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is exceptionally tender and easily shreds with a fork.
Shred Poultry & Melt Cream Cheese
- Transfer cooked chicken breasts to a cutting board and shred using two sturdy forks into bite-sized juicy strands. Set aside.
- Add the cubed softened cream cheese directly into the hot slow cooker broth. Whisk vigorously for 2 to 3 minutes until the cream cheese melts smoothly into a velvety, luscious pinkish-golden broth.
- Return the shredded chicken to the slow cooker, stir in the fresh lime juice, and toss well to coat. Cover and cook on LOW for another 15 minutes to allow all the flavors to meld together seamlessly.
Load & Serve
- Ladle hot, creamy soup into deep artisan bowls.
- Generously crown each bowl with a heaping handful of crispy golden tortilla strips, shredded cheese, diced avocado, chopped cilantro, and an extra squeeze of fresh lime juice. Serve immediately with warm tortilla chips on the side!
