Sear the Chicken Thighs to Crisp Gold
- Preheat oven to 400°F (200°C). Pat chicken thighs completely dry with paper towels. Season both sides aggressively with kosher salt, coarse black pepper, garlic powder, and paprika.
- Heat olive oil in a heavy 12-inch oven-safe cast iron skillet over medium-high heat. Place chicken thighs skin-side down and sear undisturbed for 7 to 8 minutes until the skin turns shatteringly crisp and deep golden-brown. Flip and sear for 2 minutes on the reverse side. Transfer chicken to a clean plate.
Build the Cranberry Aromatics & Reduction
- Pour off all but 1 tablespoon of rendered chicken drippings from the skillet. Add butter, halved shallots, and smashed garlic; sauté for 3 minutes until shallots begin to caramelize around the edges.
- Add fresh cranberries, rosemary sprigs, balsamic vinegar, honey, orange zest, and Halal chicken broth. Scrape the pan bottom vigorously to dissolve all savory fond. Bring to a rapid simmer for 3 minutes until cranberries begin to burst and release their tart ruby juices.
Roast to Sticky Glazed Perfection
- Nestle seared chicken thighs skin-side UP back into the skillet between the bubbling cranberries and shallots (keep the crispy skin above the sauce level to maintain crispness). Spoon a little glaze over the meat around the sides.
- Transfer skillet to the preheated oven and roast uncovered for 20 to 25 minutes until the chicken reaches an internal temperature of 175°F (79°C) and the glaze has reduced into a thick, glossy ruby sauce.
- Remove from oven and let rest 5 minutes. Spoon glossy cranberry pan reduction over each serving, garnish with fresh rosemary sprigs, and serve hot from the skillet!
