- Thoroughly pat the salmon cubes dry with paper towels to ensure a crispy golden sear.
- Place salmon cubes in a bowl and drizzle with olive oil. Sprinkle evenly with garlic powder, smoked paprika, kosher salt, and black pepper. Gently toss to coat all sides.
Sear to Crispy Golden Perfection
- Heat a large 12-inch heavy stainless steel or cast iron skillet over medium-high heat until hot. Add 1 tablespoon butter and swirl to coat the pan.
- Add seasoned salmon bites in a single layer, ensuring they do not touch. Sear undisturbed for 2 to 3 minutes until a crisp golden-brown crust forms on the bottom.
- Gently flip each cube using tongs and sear for another 2 minutes until cooked to medium tenderness (translucent pink center). Transfer salmon bites onto a warm plate.

- Reduce skillet heat to medium-low. Add remaining 2 tablespoons butter and minced garlic; sauté for 45 to 60 seconds until fragrant and golden (do not let the garlic burn).
- Squeeze in fresh lemon juice and stir in lemon zest, chopped dill, parsley, and optional red pepper flakes.
- Return seared salmon bites and any accumulated plate juices back into the skillet. Gently toss for 30 seconds to coat every crispy cube in bubbling lemon herb butter. Remove from heat immediately and serve hot!
