Honey Brown Butter Glazed Roasted Rainbow Carrots

Ingredients
  

For the Roasted Rainbow Carrots
  • 2 lbs rainbow carrots
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
For the Honey Brown Butter Glaze
  • 4 tbsp unsalted butter
  • 3 tbsp raw honey
  • 2 cloves fresh garlic
  • 1 tbsp fresh thyme
  • 1 tsp lemon juice
  • 1 pinch flaky sea salt

Method
 

Oven Roast the Rainbow Carrots
  1. Preheat oven to 400°F (200°C). Scrub carrots clean and slice larger carrots in half lengthwise so all pieces roast evenly.
  2. Spread carrots onto a large rimmed baking sheet in a single layer. Drizzle with olive oil, sprinkle with kosher salt and pepper, and toss to coat thoroughly.
  3. Roast undisturbed for 20 to 25 minutes, flipping halfway through, until edges are blistered and caramelized and carrots are tender when pierced with a fork.
Brown the Butter & Craft the Glaze
  1. While carrots roast, melt unsalted butter in a light-colored saucepan over medium heat. Swirl frequently as it foams; after 3 to 4 minutes, golden milk solids will sink and turn a fragrant, toasty nutty amber brown. Remove immediately from heat.
  2. Whisk in pure honey, grated garlic, fresh thyme leaves, and a splash of lemon juice into the hot brown butter until glossy and emulsified.
Glaze & Garnish
  1. Pour warm honey brown butter directly over hot roasted carrots on the baking sheet, using tongs to toss until every carrot is cloaked in sticky caramel glaze.
  2. Transfer glazed rainbow carrots to a warm serving platter, spoon remaining brown butter juices over top, and finish with fresh thyme and crunchy Maldon flaky sea salt.
