Sear the Seasoned Chicken Bites
- Toss chicken pieces with olive oil, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.
- Heat 1 tablespoon butter in a deep 12-inch nonstick or enameled skillet over medium-high heat. Add chicken and sear undisturbed for 4 minutes until golden-brown and cooked through (165°F / 74°C). Transfer to a plate.
Cook Pasta Shells in Broth
- In the same hot skillet, melt remaining 1 tablespoon butter. Sauté the white parts of sliced green onions for 1 minute.
- Pour in Halal chicken broth, whole milk, buffalo sauce, and uncooked pasta shells. Stir well to submerge pasta in liquid.
- Bring to a vigorous boil, then reduce heat to medium-low, cover with a tight lid, and simmer for 9 to 10 minutes, stirring twice, until shells are al dente and most liquid has absorbed into a glossy starch reduction.
Melt Cheese & Assemble
- Remove the lid and turn heat to low. Stir in cubed cream cheese until completely melted and smooth.
- Add freshly grated sharp cheddar and Monterey Jack cheese by handfuls, stirring continuously until a luxurious, velvety orange sauce forms.
- Fold in seared chicken bites and resting pan juices. Simmer for 1 minute until piping hot. Garnish with sliced green onion tops and a drizzle of extra buffalo sauce. Serve immediately!
