Method
Roast the Garlic & Brown the Butter
- Preheat oven to 400°F (200°C). Slice 1/4 inch off top of each garlic head, drizzle with olive oil, wrap in foil, and roast for 45 minutes until tender and caramelized. Mash into a smooth paste.
- In a light-colored skillet over medium heat, melt butter and swirl for 4 to 5 minutes until foam subsides and nutty golden-brown specks form. Stir garlic paste into the brown butter.
Boil & Steam-Dry the Potatoes
- Cover peeled Yukon chunks with cold salted water in a stockpot. Boil gently for 15 to 18 minutes until fork-tender.
- Drain thoroughly in a colander, then return to the hot empty pot over low heat for 90 seconds, shaking gently to steam-dry surface moisture.
Rice, Whip & Garnish
- Pass hot potatoes through a potato ricer into a warm bowl. Fold in softened cream cheese, the roasted garlic brown butter, warm cream, and warm milk until silky and cloud-like.
- Season with kosher salt, pepper, and nutmeg. Transfer to a serving bowl, drizzle with reserved brown butter, and garnish with chives and flaky salt. Serve hot.

Notes
PRO TIP: Always start potatoes in cold salted water so they cook evenly from core to edge. Never use an electric immersion blender or food processor, which shears potato starches into glue.
